The elements shouldn't really reflect the eidolons that can be possible here, but they are showing some adjustment when it comes to element alignment. It's more about their Gestalt modes anyhow, since that's their real power.
But in fact Gilgamesh is a non-elemental fucking slasher, and the fact he was not a 1-hit-KO not necessarily mean anything. Now think that Gilgamesh uses earth attacks it's a damn joke.

Yes (even though I could care less about their element), it's another bonus for us to utilize his potential for whatever reasons. If you were to assign Gilgamesh an element, what would it be?

Judging by the red hues, multiple arms, its dark nature and horns protruding front, my money is that it's either: a new summon, that weird summon thing Paine go or a totally redesigned Diabolos.

Didn't Gilgamesh have a sword? I don't recall seeing the summon holding a weapon. It may be a complete redesign of an older summon like Remora for example. I'm hoping it isn't a new summon as I can't keep up with them all! (over the entire series I mean)
