In Lightning/Eclair's defense, Vanille looks and sounds quite a bit like Vanilla. I think (though it could be simply mistranslated) that at one point in pre-production it may have actually BEEN Vanilla.
So... perhaps a female=lickable desert name scheme is in order for this game.
That said, the english version seems to have decided that while the japanese pronounce it "ba-ni-ru", sounding rather "va-ni-la", they will pronounce it "van-eel". So, possibly Eclaire will be pronounced different, or, as Dirtyred said, become something like Claire.
I'm not sure I like Claire on Lightning, but Claire and Serah Farron sounds better than Eclair and Serah Farron.

Well, considering it's still Vanilla in Japan, it's almost certain that's what it was for a while in the English version, too... If that's what you're talking about there, anyway.
I honestly hope to god that it's Claire though (or something else), or else I'm going to never be able to stop thinking about different jokes relating to Fang's name and the names of the other two women.
Well, we have Sonic with that rabbit and the little bobble thing called Cream and Cheese, so... perhaps naming your characters after food is trendy of late.

No o_o I mean, I am fully aware that it is also the name of a pastry, but the primary thing that comes to mind is an actual lightning, so it doesn't feel all that strange.
But having googoled it just now I realized the english name of that thing is actually eclair. Eww pardon, I call it another way in italian so I thought it had it's own name in other languages too.
If it does get changed to Claire (and I hope to all the powers that be that it is), I'm so taking credit for calling it first and being the inspiration.
