Why do many people in Ivalice have gray hair?

At the very least, the following people have natural silver/grayish hair:

Reks Ratsbane (Vaan's brother)
Ashe
Judge Drace

Do these three (and technically three = "many") all have vitamin B-12 deficiencies or something? http://en.wikipedia.org/wiki/Pernicious_anemia

Wikipedia says gray hair in people who are not old is caused by Pernicious anemia.

And before you retort "it's just a game," there are yet a few things that they try to keep realistic. I don't see Vaan with three eyes and Ashe with six bewbs.

The love for strange colors in anime and japanese games is because the overwhelming majority of japanese have black hair ... So when creating a "fantasy" it should be different from the common reality
