I also listen a lot to game music, my favourite composers are Nobuo Uematsu and Motoi Sakuraba: Here's my list:

Wow, thanks. I never really looked into Motoi Sakuraba, some of his stuff is pretty good. If you're into that style of music, I recommend checking out the full soundtrack for "Super Metroid". I'd say it's one of my favourite VG soundtracks, alongside the likes of Chrono Trigger's. For a SNES game, it's really astounding how the distinct melodies in it really gives off a unique (eerie) atmosphere, love it :D

Mega Man 2 has one of the best soundtracks ever. The other MM games also has some good tunes.
Castlevania series has some good tunes.
Good Square Enix music:
Most FF games have a few good tracks, but Final Fantasy VI has the best. Unlimited SaGa, Live A Live and Bahamut Lagoon also has good music.
One of the best composers is Jeremy Soule. I don't listen to his music outside of games, but his soundtracks fit the games perfectly.

Guild Wars
His music does not try to overshadow anything else in the games, he simply tries to make the music a part of the world. Not all composers does this well.
There are many more games that have good music, but they are many and listing all of them would be a pain in the ass.

Yeah, I too think personally that they're at the top of videogame Music Producers/composers. But when you say that Final Fantasy 6 is the King at music, in the series, I'll have to disagree, since, for me, it ties with FF9.
That game had so much variation in its tracks, which fitted different moods within its scenes. The game ranged from stuff like:
